Directions:
1. Prepare the White Sauce:
- In a saucepan over medium heat, combine the heavy cream and minced garlic. Simmer for about 2-3 minutes until the garlic is fragrant but not browned.
- Stir in the grated Parmigiano Reggiano and pepper. Continue stirring until the cheese is melted and the sauce is smooth.
- Season with salt to taste. If the sauce is too thick, add water a little at a time until you reach your desired consistency. Remove from heat and set aside.
2. Preheat the Oven:
- Preheat your oven according to the instructions for your sprouted spelt crust. If you're using a pizza stone, place it in the oven to heat up as well.
3. Assemble the Pizza:
- Place the prepared crust on a baking sheet or pizza stone.
- Brush a thin layer of organic extra virgin olive oil over the crust to enhance flavor and prevent sogginess.
- Spread a generous amount of the white sauce over the crust, leaving a small border around the edges.
- Evenly distribute the cubed fresh mozzarella over the sauce.
- Dollop spoonfuls of ricotta cheese across the pizza for creaminess.
- Scatter the sliced pickled jalapeños on top of the cheese.
4. Bake the Pizza:
- Carefully transfer the pizza to the preheated oven (or onto the pizza stone).
- Bake according to the crust instructions, typically about 12 minutes, or until the crust is golden brown and the cheese is bubbly.
5. Finishing Touches:
- Once baked, remove the pizza from the oven. Let it cool for a couple of minutes.
- Optionally, drizzle a little more organic extra virgin olive oil on top for added flavor.
