Lebanese Za'atar Flatbread Recipe

Ingredients: 

  • 1 Stone Sisters Organics Happie Organic Sprouted Spelt Crust 
  • 2 tablespoons of za'atar mix
  • 3 tablespoons of extra virgin olive oil
  • 1/4 cup of labneh 
  • 2 Roma tomatoes 
  • 2 mini Persian cucumbers (or peeled and seeded English or regular cucumbers)
  • Fresh mint to taste 
  • Olives 

 Directions: 

  1. Preheat oven to 375°F (190°C).
  2. Mix 2 tablespoons of za'atar mix with 3 tablespoons of olive oil.
  3. Spread the za'atar mixture evenly over the crust.
  4. Bake the crust in the preheated oven until golden.
  5. Allow the crust to cool for 5 minutes. 
  6. Spread labneh on top of the crust to your desired amount. 
  7. Dice Roma tomatoes and sprinkle them on top of the labneh. 
  8. Cut mini Persian cucumbers into slices and spread them on top of the tomatoes. 
  9. Chop the mint leaves and sprinkle them on top of the cucumbers.
  10. Drizzle olive oil over everything and add additional salt to taste.
  11. Slice the flatbread and serve. Enjoy!

  • 2 cups Dried thyme 
  • 2 cups Ground sumac
  • 2 cups Toasted Sesame Seeds

Labneh is a Lebanese strained yogurt that has a thick creamy consistency. It can be made by straining unsweetened unflavored yogurt in a cheese cloth overnight. Some store bought options include these brands: Byblos, Arz & Cedars. Locally it can be found at middle eastern grocery stores, Sprouts or Whole Foods.
