Fruit Tart

Recipe by Emily Schuermann, Food for a Year

Serves 4


  • 1 Happie Organic Sprouted Spelt Crust
  • 2 tsps. Olive oil 
  • 4 oz. Cream cheese (room temperature)
  • 3 tbsp. Strawberry fruit spread
  • ¼ cup each (or your favorite seasonal fruit such as)
  • Sliced strawberries
  • Sliced bananas
  • Blueberries
  • Raspberries
  • Blackberries


Preheat oven to 375 degrees. Using a hand mixer, combine cream cheese and fruit spread, whipping until fluffy (1-2 minutes).

Meanwhile, spread olive oil evenly over entire crust, and bake in a 375° oven for 3-5 minutes (place the crust directly on the rack)

Allow to cool slightly and top with whipped strawberry cream cheese and arrange fruit as desired.

Cut into slices and serve.
